On Massaging Kale
Although many people tend to skip this step of preparing a kale salad, massaging kale is actually the key step to getting vibrant and chewy kale. Your salad will be pleasantly tasty and leathery to the taste buds once you give your massage a back rub.
Prepare kosher salt and a big bowl. Cut a big bunch of kale into bite-size pieces and put them in the bowl, then sprinkle the kale with some generous pinches of salt. Using your fingertips, rub the salt into each piece of kale while tossing it at the same time.
Keep massaging the kale until the color turns into a more vibrant shade of green and begins to slightly wilt. This will only take a few minutes of massaging and tossing.
Once this happens, you can add your preferred dressing, and continue tossing to coat. Olive oil and lemon juice are the perfect ingredients for a simple and delicious dressing. You can even add half a cup of yogurt if you prefer a creamier salad.
